8 oz. gluten-free elbow pasta

4 strips of bacon

2 Tbsp. butter, unsalted

2 Tbsp. gluten-free all-purpose flour

2 cups heavy cream

½ tsp. paprika (optional)

¼ tsp. garlic powder (optional)

2 cups cheddar cheese, shredded 

½ cup parmesan cheese, grated 

kosher salt and black pepper, to taste

Recipe Steps


Step 1

Preheat your oven to 350°F (175°C) to bake the mac and cheese for a crispy top. Cook the gluten-free pasta according to package instructions until al dente, drain, and set aside.

Step 2

In a skillet, cook the bacon over medium heat until crispy. Remove from the skillet, let cool, and then crumble. Reserve the bacon fat in the skillet.

Step 3

Add the unsalted butter to the bacon fat in the skillet and melt over medium heat. Stir in the gluten-free flour to form a roux, cooking for about 1 minute.

Step 4

Gradually pour in the cream, whisking constantly to prevent lumps. Add the optional paprika and garlic powder—season with salt and pepper to taste. Continue to whisk until the sauce thickens.
