1 large potato, peeled and grated

1 medium tomato, sliced

1 garlic clove, minced

Salt and pepper to taste

3 large eggs

1Tbsp. butter, unsalted

Chopped parsley (optional)

Breakfast Sausage links (optional)

Recipe Steps


Step 1

Mix the grated potato, 1 egg, minced garlic, salt, and pepper in a bowl.

Step 2

Heat a frying pan over medium heat and add a tablespoon of butter.

Step 3

Place an egg ring in the pan and fill it with the potato mixture, pressing it down with a spoon.

Remember: use a small amount of butter to grease the egg ring before adding the potato mixture.

Step 4

Fry for about 5 minutes until the bottom is crispy and golden brown.

Step 5

Carefully remove the egg ring and flip the potato hash over. Fry for another 5 minutes until the other side is crispy as well. When done remove from pan and set aside. Keep warm.

Crack an egg into the center of the pan and season with salt and pepper.
