1lb. ground beef

1 Tbs. extra virgin olive oil

1 medium onion, diced

1 red bell pepper, diced

1 tsp. chili powder

½ tsp. ground cumin

½ tsp. garlic powder

½ tsp. paprika

Salt and pepper to taste

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can corn, drained

1 cup salsa

¼ cup chopped fresh cilantro

1 bag gluten-free tortilla chips

2 cups shredded cheddar cheese

Sour cream, diced avocado, and sliced jalapeños for topping

Recipe Steps


Step 1

Preheat the oven to 375° F.

Step 2

Heat the olive oil over medium-high heat in a large skillet.

Step 3

Add the ground beef and cook until browned, stirring occasionally.

Step 4

Add the diced onion and red bell pepper to the skillet and cook until softened about 5 minutes.

Step 5

Add the chili powder, cumin, garlic powder, paprika, salt, and pepper to the skillet and combine.
