Ingredients
1 lb. fresh green beans, trimmed
3 Tbsp. unsalted butter
½ cup slivered almonds
2 cloves garlic, minced
1 lemon, zest
½ lemon, juice
½ tsp. red pepper flakes
Salt and pepper, to taste
Recipe Steps
Step 1
Bring a large pot of water to a boil. Add the green beans and cook for about 5 minutes until they are bright green and tender-crisp.
Step 2
Drain the beans and plunge them into an ice water bath to stop the cooking process. This will keep your green beans bright, green, and snappy.
Step 3
In a large skillet, melt the butter over medium heat. Add the slivered almonds and cook them, stirring frequently, until they are golden brown.
Note: Toasting the almonds should take about 3-4 minutes. Be careful not to burn them.
Step 4
Add the minced garlic and red pepper flakes to the skillet with the almonds and cook for another 1-2 minutes until fragrant.
Step 5
Drain the green beans from the ice water and add them to the skillet. Toss to coat with the buttery almond and garlic mixture. Cook for an additional 2-3 minutes until the beans are heated through.
Step 6
Remove the skillet from the heat. Add lemon zest and juice, then season with salt and pepper to taste. Toss everything to combine.
Step 7
Transfer the spicy green bean almondine to a serving dish. Serve immediately and enjoy your gluten-free side dish!
