1lb. ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
1 can (14.5 oz) diced tomatoes
1 can (15 oz) tomato sauce
1 can (15 oz) kidney beans drained and rinsed
1 can (15 oz) black beans drained and rinsed
1 can (16 oz) vegetarian baked beans, optional
1 can (8 oz) whole kernel sweet corn, optional
1 Tbs. chili powder
1 tsp. ground cumin
½ tsp. paprika
½ tsp. salt, kosher
¼ tsp. black pepper, ground
¼ tsp. cayenne pepper
½ cup water, room temp
Recipe Steps
Step 1
In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned, stirring occasionally. Optionally, drain the excess fat.
Step 2
Add the onion, garlic, and bell pepper to the pot and make sure to cook until softened about 5 minutes.
Step 3
Add the diced tomatoes, tomato sauce, kidney beans, black beans, chili powder, cumin, paprika, salt, black pepper, cayenne pepper, and water to the pot. Stir well to combine.
Step 4
Bring the chili to a simmer and let it cook for 20-30 minutes, stirring occasionally.
Remember: If adding baked beans and sweet corn, ensure to add them in 10 minutes before taking it off the heat.
