If there's one thing that brings people together, it's food. Whether it's a family dinner, a potluck with friends, or a backyard barbecue, there's something special about sharing a meal with the people you love. And for me, one of my all-time favorite dishes to make for a crowd is Grilled Chicken Satay with Paprika Yogurt Sauce. This recipe is special because my love for Southeast Asian cuisine inspires it. I fell in love with the vibrant colors, bold flavors, and unique ingredients, a hallmark of the region's cuisine. And when I discovered the joys of satay - skewered meat grilled to perfection and served with a rich, savory sauce - I knew I had to learn how to make it myself.

The result is a recipe that's become a staple in my household, and I love to share it with others. The juicy, tender chicken is marinated in aromatic spices and gluten-free soy sauce, then grilled to smoky perfection. And the paprika yogurt sauce is the perfect balance of tangy, creamy, and slightly spicy - like a flavor explosion in your mouth! I've served this dish at countless gatherings, and it never fails to impress. I've even had some friends tell me they've been dreaming about it since they tried it!

But what I love most about this recipe is how adaptable it is. Depending on how much heat you can handle, you can easily adjust the spice level to your liking. And if you're vegetarian or want to mix things up, you can swap out the chicken for tofu or vegetables like bell peppers and zucchini. The possibilities are endless!

So, if you're looking for a show-stopping dish to impress your guests (or just your taste buds), you've come to the right place. So, let's fire up the grill and get cooking!

Ingredients

The marinade:

1lb. chicken breast, boneless, skinless, 1inch cubed

¼ cup no-soy-soy sauce

2 Tbsp. brown sugar, dark

2 Tbsp. extra-virgin olive oil

2 Tbsp. fresh lime juice

2 cloves garlic, minced

1 tsp. ground cumin

½ tsp. ground turmeric

¼ tsp. cayenne pepper

The paprika yogurt sauce:

1 cup Greek yogurt, plain

1Tbsp. smoked paprika

1Tbsp. fresh lime juice

1Tbsp. honey

¼ tsp. kosher salt

Recipe Steps

Step 1

In a large bowl, whisk together the no-soy-soy sauce, honey, olive oil, lime juice, garlic, cumin, turmeric, and cayenne pepper until well combined.

Step 2

Add the chicken cubes to the bowl and toss to coat evenly with the marinade. Cover the bowl with plastic wrap and place it in the refrigerator to marinate for at least 30 minutes or up to 2 hours.

Step 3

While the chicken is marinating, prepare the paprika yogurt sauce by whisking the Greek yogurt, smoked paprika, lime juice, honey, and salt in a small bowl. Cover the bowl and refrigerate the sauce until ready to serve.

Step 4

Preheat a grill or pan to medium-high heat when ready to grill the chicken.

Step 5

Thread the marinated chicken cubes onto skewers, leaving a little space between each piece.

Step 6

Place the chicken skewers on the grill or grill pan and cook for 8-10 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the outside.

Step 7

Remove the chicken from the grill and transfer it to a serving platter.

Remember: Careful. Stainless steel skewers run hot!

Step 8

For dipping, serve the grilled chicken satay hot with the chilled paprika yogurt sauce on the side. You can also garnish the chicken with chopped fresh cilantro, or serve with wild rice, and lime wedges for extra flavor and presentation. Enjoy your delicious and healthy Grilled Chicken Satay with Paprika Yogurt Sauce!
