8 medium-sized potatoes

8 Tbsp. butter, unsalted

5 cloves garlic, minced

1 Tbsp. chopped rosemary, fresh

1 dash paprika, powder (optional)

½ tsp. black pepper, ground

½ tsp. kosher salt

Recipe Steps


Step 1

Preheat your oven to 375°F. Grease a baking dish or cast-iron skillet with butter or cooking spray.

Step 2

Thoroughly wash the potatoes. Thinly slice the potatoes into ⅛ inch rounds using a mandoline slicer or a sharp knife.

Step 3

In a small saucepan, melt the butter over medium heat. Add the minced garlic, paprika(if using), and black pepper to the pan and cook until fragrant or when the garlic turns lightly golden, about 1-2 minutes. Remove from heat.

Note:  For the Garlic flavor intensity, adjust accordingly. 5 cloves produce the most flavor, while 2 cloves produce a more minimal kick. Adjust to your taste preference.

Step 4

Stack the potato pieces slightly vertically in the prepared skillet, packing them together until all the slices are used up.

Step 5

Once all the potato slices are in the skillet, generously glaze the potatoes with the garlic butter mixture using a brush. Drizzle any remaining garlic butter mixture over the top. Sprinkle with salt and rosemary.

Step 6

Roast in the preheated oven for about 50 minutes to 1 hour or until the potatoes are golden brown and crispy on top.

Note:   Once baked, optionally broil on high for an additional 2-5 minutes to get that ultimate roast and crisp.

Step 7

Once cooked, remove from the oven and let them cool for a few minutes before serving.

Step 8

Serve as a delicious side dish or a main course topped with your favorite protein.
