6 cups fresh baby spinach
2 ripe avocados, sliced
½ cup chopped walnuts
¼ cup crumbled feta cheese (optional)
¼ cup dried cranberries (optional)
¼ cup thinly sliced red onions
2 Tbsp. extra-virgin olive oil
1 Tbsp. balsamic vinegar
1 Tbsp. honey
½ tsp. Dijon mustard
Salt and pepper, to taste
Recipe Steps
Step 1
Combine the baby spinach, sliced avocados, chopped walnuts, crumbled feta cheese, dried cranberries, and thinly sliced red onions in a large salad bowl. Toss to combine.
Step 2
In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.
