4 boneless chicken thighs, skinless bite-sized pieces

1 onion, chopped

2 garlic cloves, minced

1 red bell pepper, chopped

2 habanero peppers, chopped

½ cup extra virgin olive oil

1 can crushed tomatoes

1 cup chicken broth

1 tsp. paprika

1 cube chicken bouillon

Salt and pepper, to taste

2 cups cooked white rice

Recipe Steps


Step 1

Heat the olive oil over medium-high heat in a large pot or Dutch oven. Add the chopped onion, minced garlic, habaneros, bell pepper, and sauté for 5-7 minutes or until the vegetables are tender.

Step 2

Add the chicken pieces to the pot and cook for 5-7 minutes or until the chicken is browned on all sides.

Step 3

Add the can of crushed tomatoes to the pot and the chicken broth, paprika, crushed bouillon, salt, and pepper. Stir well to combine.

Step 4

Bring the mixture to a simmer and reduce the heat to low. Cover the pot with a lid and cook the stew for 35-40 minutes or until the chicken is tender.

Step 5

Prepare the rice according to package instructions while cooking the stew.

Step 6

Once the stew and rice are done cooking, serve the stew over a bed of rice. Enjoy!
