Ingredients

4 chicken thighs, bone-in, skin-on

Kosher Salt

Black pepper

1Tbsp. extra-virgin olive oil

1Tbsp. unsalted butter

Sliced mushrooms (8 oz)

2 cloves garlic, minced

½ tsp. dried thyme

½ tsp. dried rosemary

½ cup chicken broth

½ cup heavy cream

Fresh parsley, Chopped for garnish

Recipe Steps

Step 1

Preheat the oven to 375°F. Season the chicken thighs generously with salt and black pepper.

Step 2

Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs, skin side down, and cook for 5 to 6 minutes or until golden brown. Flip the chicken thighs over and cook for 4 to 5 minutes.

Step 3

Transfer the skillet to the oven and bake for 20 minutes or until the chicken is cooked through.

Step 4

Remove the skillet from the oven and transfer the chicken to a plate. Cover with foil to keep warm.

Step 5

Place the skillet back on the stovetop over medium heat. Add the butter and sliced mushrooms to the skillet and cook for 5 to 7 minutes or until the mushrooms are tender and lightly browned.

Step 6

Add the minced garlic, dried thyme, and rosemary to the skillet and cook for 1 to 2 minutes or until fragrant.

Step 7

Pour in the chicken broth and stir to scrape up any browned bits from the bottom of the skillet. Bring the mixture to a simmer and cook until the liquid is reduced by half.

Step 8

Add the heavy cream to the skillet and stir to combine. Bring the mixture to a simmer and cook for 3 to 4 minutes or until the sauce has thickened slightly.

Step 9

Return the chicken thighs to the skillet and spoon the creamy herbed mushroom sauce over them.

Step 10

Garnish with chopped fresh parsley and serve hot with your favorite sides. Enjoy!
