For the Crust:

1½ cups gluten-free graham cracker crumbs

⅓ cup unsalted butter, melted

2 Tbsp. sugar, granulated

For the Filling:

4 cups (32 ounces) cream cheese, room temp

1 cup sugar, granulated

4 large eggs

2 tsp. vanilla extract

Recipe Steps


Step 1

Preheat oven to 350°F. Combine graham cracker crumbs, melted butter, and sugar; press into bottom of a 9-inch springform pan and bake for 10 minutes.

Step 2

In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, mixing well.

Step 3

Pour filling over crust. Bake for 45-55 minutes or until center is almost set.

Step 4

Let cheesecake cool, then refrigerate for at least 4 hours or overnight.

Step 5

Run a knife around edge of pan, remove rim, slice, and serve cheesecake.
