3 cups gluten-free all-purpose flour

½ tsp. xanthan gum

4 Tbsp. sugar

2 ½ Tbsp. active dry yeast

½ tsp. kosher salt

5 Tbsp. unsalted butter, softened

1 cup warm milk (or dairy-free milk substitute)

2 large eggs, room temperature

1 tsp. baking powder

Recipe Steps


Step 1

Whisk the gluten-free flour, xanthan gum, baking powder, sugar, active dry yeast, and salt in a large mixing bowl.

Step 2

Add the softened butter, warm milk, and eggs to the dry ingredients. Mix until well combined.

Step 3

Use a stand or hand mixer to beat the dough on high speed for about 3-5 minutes until it becomes smooth and elastic.

Step 4

Use a cookie scoop or spoon to portion 12 equal-sized rolls. Place the dough balls in the prepared baking pan.

Step 5

Cover the bowl with a damp kitchen towel and let the dough rise in a warm place for about 1 hour or until it doubles in size.

Step 6

Preheat the oven to 375°F.

Remove the kitchen towel, brush with egg-wash and bake the rolls in the oven for 20-25 minutes or until they turn golden brown on top. Ensure the bread reaches a safe internal temperature of 210°F before removing.
