Ingredients
1 head green cabbage, thinly sliced
1 medium-sized carrot, grated
1 small red onion, thinly sliced
¼ cup rice wine vinegar
¼ cup mayonnaise
2 Tbsp. Dijon mustard
2 Tbsp. honey
1 tsp. celery seeds
kosher salt , to taste
½ cup roasted peanuts, chopped (optional)
Recipe Steps
Step 1
Combine the sliced cabbage, grated carrot, and red onion in a large bowl.
Step 2
In a separate bowl, whisk together the rice wine vinegar, mayonnaise, Dijon mustard, honey, celery seeds, and salt until well combined.
Step 3
Pour the dressing over the cabbage mixture and toss everything together until the veggies are well coated with the dressing.
Step 4
Add the chopped roasted peanuts to the slaw and toss again to distribute them evenly. You can reserve the peanuts and sprinkle them on the slaw just before serving for a crunchy texture.
Step 5
Cover the slaw and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
Step 6
Serve the creamy vinegary crunchy slaw as a side dish or a topping for sandwiches, burgers, or tacos. Enjoy!
