When we first started our gluten-free journey, finding a breakfast that didn’t revolve around the usual toast or pastries felt like a real challenge. Honestly, we were a bit lost—I was a bit lost. But then, I started thinking back to those times when my family and I would visit our favorite Indian restaurant. After indulging in all the rich curries and savory dishes, there was always one thing I looked forward to: dessert. But it wasn’t your typical American dessert like cake or ice cream. No, it was rice pudding—simple, sweet, and absolutely delicious.

That memory sparked an idea. Why couldn’t rice pudding be a breakfast option? I mean, people have oatmeal for breakfast, so why not rice pudding? So, we gave it a try, and this recipe was born. It’s everything you want in a morning meal—simple, delicious, and best of all, gluten-free. No need to worry about hidden ingredients or an upset stomach. Just pure, clean, and satisfying rice pudding that I’m sure will become a staple in your breakfast routine. Trust me, you’re going to love it.

Ingredients

1 cup rice, long-grain

1½ cups water

¼ tsp kosher salt

3 cups milk, whole

½ cup sugar, granulated

1 tsp vanilla extract

Cinnamon, for garnish

Recipe Steps

Step 1

In a medium saucepan, combine the long-grain rice, water, and kosher salt. Stir well to combine the ingredients.

Note: For a less starchy taste, parboil, and rinse rice thoroughly before starting step 1.

Step 2

Place the saucepan over medium-high heat. Cook the mixture, bringing it to a boil. Once boiling, reduce the heat to medium-low, cover, and simmer until the rice is tender and the water is absorbed, about 10-15 minutes.

Step 3

Once the rice is cooked, add the whole milk and granulated sugar to the saucepan. Stir the mixture to combine.

Step 4

Continue cooking over medium heat, stirring frequently, until the mixture thickens and the rice becomes creamy, about 15-20 minutes. Stir in the vanilla extract.

Step 5

Remove the saucepan from the heat and let the pudding cool slightly to allow it to thicken further.

Step 6

Transfer the rice pudding to serving bowls. Garnish with a sprinkle of cinnamon on top.

Step 7

Serve warm or chilled and enjoy your comforting and creamy rice pudding!
